As we continue to grow our sales of Bradley Food smokers we thought it would be a good idea to publish on our website some of the common questions that we get asked regarding the Bradley Smoker products

 

Where must I locate the smoker and can it be used indoors?

 

The Bradley Smoker is a natural draft smoker which means that smoke rises through the cabinet and exits through the vent in the top. It would normally be used outdoors and is light enough to lift and carry easily from a place of permanent storage into the open air. That said, it would be perfectly possible to use the smoker indoors having arranged a method of smoke extraction.

 

How much smoke does it make?

 

Too much to use indoors in a confined space without specific ventilation - see above. But outside in the open, or under a lean to, the smoke rapidly dissipates . It does not make bonfires full of smoke. It will not disturb the neighbours!

 

What is the difference between a cold smoked or hot smoked product?

 

Most smoked foods that are produced for resale are first cured and then cold smoked. Cold smoking is usually done below 100 degrees F. or below a temperature that burns or liquefies fat. Heat is added at the end of the smoking process for appearance and flavour. A hot smoked food needs very little curing and has the appearance, taste, and texture of fully cooked foods.

 

Why is cold smoke so important?

 

Creating smoke without heat is the best way to control the flavour of any food being smoked. In most food smokers heat is generated by burning wood, as the wood burns from ignition to complete ash the wood generates heat. At the point where wood is self-consuming (burns without any heat source) it produces a lot of heat. At this point there is very little smoke produced and the temperature within the smoker is out of control. A Food Smoker will produce a far superior tasting food if the temperature and smoke remain at a constant and controlled level.

 

How long does it take to smoke food in the Bradley Smoker?

 

 

 

Obviously the times vary with the size of the cuts or portions of food, and with whether you are cold or hot smoking. Well you knew that, but to give a simple answer - hot smoked chicken in the time it takes to cook, say 90 minutes - 2 hrs, cold smoked salmon in 4 to 5 hours, bacon (cold smoked) in 6 hours, cheese in say 3 hours, mackerel in say 45 minutes. The answer is probably a lot quicker than you imagined.

 

Are the Bisquettes organic?

 

 

 

The bisquettes are made with all natural products and the wood we use is clean and kiln dried and has not been used for some other purpose before we made it into a bisquette. Collagen is used to bind the wood chippings. The bisquettes are in all respects organic.

 

What types of foods are the different Bisquettes used for?

 

There are 9 different flavours of bisquettes that you can purchase for the Bradley smoker and we recommend that clients who are new to smoking purchase a variety pack with their first machine. This will allow you to trial some different flavours against the foods you are cooking to find the flavours that suit your pallet and the end product you are looking to achieve, with each bisquette burning in about 20 minutes that gives you approx 4 hours of smoking time with each flavour from the variety pack.

How can I clean a duck for cooking?

I am planning my first duck hunt and while I am a great shot and I have confidence I will get something, truth be told, I dont know how to prep it for a great BBQ. Also I am using a 20 Gauge. What are the positives and negatives vs a 12 gauge?

First of all dont skin it , ploute it till all feathers are removed.
Forget about the bbq, full powere in the overn for 4 hours +
baist it in its own fat as often as possibal till its golden and crisp.
The onley factor with the 12 and 20 is you may get a slight bit more range out of the 12, nothing to worry about, just make sure you have some heavy shells in

How to Store Your Gas Grill: The ABCs

A few lucky folks live in climates where they can use their Gas Grills  year-round, but if the approach of winter weather indicates the end of coooking out this year for you, it's time to consider how to store your grill.

A top quality gas grill is a treasure to use but can be something of an investment. If you need to be sure you get the most out of your investment, you're going to need to give that grill a bit of particular care. But as with most things, if you go step-by-step, you'll be finished before you know it.

A Is for Assemble

Assemble your supplies. You'll have to have warm, soapy water, a brass bristle brush, a soft piece of cloth, a towel, a few toothpicks and sandpaper, and your owner'smanual .  You'll need about an hour or so for the job.  Now, go to...

B Is for Briquettes

Actually B is for briquettes and grilling grids. Briquettes and cooking grids get very greasy with use, and you certainly shouldn't store greasy equipment. (Yuck.) Turn the briquettes over so the greasy side is up facing toward the burner. With the grilling grids in their normal place, turn on the grill and close up the lid. Set the flame on "high" and let everything sit for 15 minutes while the warmth burns the grease on the briquettes and the grids.

Once it all has cooled off, remove the briquettes and grids and use the brush and the soapy water to wash off any leftover grease. Rinse, dry, and set them aside so you can  move on to the next step.

C Is for Clogs

You now need to clean the burner and tubes due to the fact that if they are (or get) clogged with food drippings, they can shortout the igniter flame. (And you seriously don't want to shortout your igniter flame.) When the grill is in storage, spiders and bugs at times move into the gas tubes (aka venturi tubes). Between grease and wildlife, your grill could become difficult to start and/or have an uneven flame the next time you  try to use it, so be positive all of the elements are clean.

Turn off the gas at the tank if you haven't already. Following your owner's manual, unfasten the burner, slip the gas tubes off of the gas lines, and remove the whole unit. Use the soft rag  and soapy water to wash it. Be as detailed as you can and try not to miss any build up of dirt or grease behind. Dry everything and use the toothpicks to unclog and clean the gas ports. Clean the gas tubes with the soapy water, as well, and set every thing aside.

D Is for Damage

Damage that you are going to try to decrease the chance of, that is. Before you start cleaning the grill, which could help you prevent grease buildup and catch any corrosion before it develops, cover the gas orifices with aluminum to prevent water from getting in. Use the brush and water to wash the grill housing both inside and out. Rinse the housing, towel dry, and clear away the foil you put on.

Now is the time to check out your grill's paint for any chips or damage . A lot of grills won't rust, but if the paint is chipped, dampness can get in and weaken them. So when the grill has cooled and dried it's the time to stop this by sanding any damaged areas you find until you have revealed a white, shiny patch. Then utilizing a primer and some "high-heat" paint, touch-up the sanded parts.

E Is for Everything

Put everything -- burner, gas tubes, igniter -- back together.

F Is for Fuel

Check your fuel supply to be confident your propane tanks are not dented or rusted. If they are, you should replace them immediately.

G Is for Goodnight, Grill

Exactly where are you going to "put your grill to bed"?  A fixed outside grill, of course, must  remain in the place where it is, and you can keep the Propane Tank in its usual location and connected. You will want to put a protecting cover over the grill. If you store your grill indoors in the winter season, you need to disconnect the propane tank and leave it   upright  outside.

Verify your handbook on the right way to disconnect your tank. Tape plastic over the Gas Line openings of the grill to keep bugs out and keep the tank in a cool, shady place away from furnace and clothes dryer vents and children's and pets' play areas. Never keep the container in an enclosed room such as your house, cellar, or garage.

H Is for Happy 

Which is what you'll be in the spring when you all of a sudden get the urge to begin grilling and your gas Grill Set to go.

Smoked Pork Baby Back Ribs with Spicy Honey Sauce

Ingredients

1/2 cup soy sauce
1/2 cup hoisin sauce*
1/2 cup oyster sauce*
1/2 cup honey
1/2 cup cream Sherry
2 tablespoons finely grated peeled fresh ginger
2 tablespoons black bean garlic sauce*
6 garlic cloves, minced
1/2 teaspoon Chinese five-spice powder
3 1 1/2-pound racks baby back pork ribs

Preparation

Whisk first 9 ingredients in large roasting pan to blend. Add ribs to pan; turn to coat. Chill overnight, turning ribs occasionally. Remove ribs from marinade, reserving marinade.

Place handful of torn newspaper in bottom of charcoal chimney. Top with 30 charcoal briquettes. Remove top rack from barbecue. Place chimney on lower BBQ rack. Light the newspaper and allow the charcoal to burn until ash is gray, about 30 minutes.

Open the bottom BBQ vent. Turn out hot charcoal onto 1 half of bottom rack. Using metal spatula, spread charcoal to cover approximately 1/3 of rack. Fill foil loaf pan halfway with water and place opposite charcoal on bottom rack.

Place on the top rack on barbecue. Arrange the ribs on top rack above water in loaf pan. Cover BBQ with lid, positioning top vent directly over ribs. Place stem of candy thermometer through top vent, with gauge on outside and tip near ribs (thermometer should not touch meat or BBQ rack); leave in place during cooking.

Use top and bottom vents to maintain temperature between 250°F and 300°F, opening vents wider to increase heat and closing to decrease heat. Leave any other vents closed. Check temperature every 10 minutes.

Cook ribs until meat is very tender when pierced with knife, turning ribs and basting with reserved marinade every 20 minutes, about 1 hour 30 minutes total. Open BBQ only when necessary (to baste meat, for instance) and close quickly to minimize loss of heat and smoke.

After first 30 minutes of cooking, use technique described earlier to light additional 15 charcoal briquettes in same charcoal chimney set atop nonflammable surface.

If cooking temperature drops below 250°F, use oven mitts to lift off top rack with ribs and place on heatproof surface. Using tongs, add half of hot gray charcoal from chimney to bottom rack. Replace top rack on barbecue, placing ribs above water in loaf pan. Cover with lid.

Transfer ribs to baking sheet; allow to stand 10 minutes. Cut the meat between bones to separate ribs and serve.
